dairy-free avocado chickpea mashed sandwiches

I had posted about these sandwiches before, but I modified Ally's recipe to account for being dairy-free and thought I would share here.

1 can of drained and rinsed chickpeas
1 avocado
2 tbsp. lemon juice
1 tsp. white vinegar
3 tbsp. mayonnaise 
salt and pepper to taste
dairy-free bread (we like Nature's Own 12 grain)
bacon (optional)

In a food processor, combine the chickpeas, flesh from the avocado, lemon juice, and mayonnaise. If you want to add onion, garlic, or shallot to the mash, you can do so. Add salt and pepper to taste and run the food processor until the ingredients are combined. Place the mash on your bread along with lettuce, sprouts and bacon (if you so desire).
